Complex grits with a large amount of wheat and oats form the basis of this beer.
Fermented with house yeast on blackberry and plum pulp and acidified with lactobacillus.
7 months in French Pinot Noir casks and the result is a deep purple beer with both sweet and sour from the fruit, acid from the lactobacillus and more than a hint of grape and tannin from the wine that was there before.
