The Emelisse Eisbock was originally the Emelisse Barley Wine. Freezing the original beer at -20℃ allowed the alcohol, color and flavor to drain away, while the liquid part turned into a solid state. This method is called reverse distillation and resulted in a thick, full and syrupy beer with lots of flavor and alcohol.
