A traditional cloudy mash has been brewed as they would in most Lambic breweries in Brussels to generate a lot of starch which can work slowly over a year of fermentation in the Foeders. Giving a soft funky, slightly sour edge with a fruit balance to the forward sweetness of the apricots added 1 month before packaging.
