Iris 2014 from Brasserie Cantillon is of spontaneous fermentation, using only Pale Ale malt.
50% fresh hops and 50% over-year hops are used for the Iris. The young hops provide a wonderful bitter touch, while the three-year-old hops with its tannins ensure that the beer can be stored perfectly.
When the Iris has matured for two years in barrel, young hops are added two weeks before bottling. A linen bag with flavored hops is poured into the barrel and soaked in the beer for two weeks. This technique, known as cold hopping, makes it possible to enhance the flavor of the beer and make both the smell and taste more bitter.
Although it is a spontaneous fermentation beer, the Iris differs greatly from the Lambic. With its amber color and slightly bitter caramel taste, it is a complex, nuanced beer.
