Maturation: Bocoy 2021

For this Maturation series, they select beers matured in one type of barrel to show how different barrels influence the final character of a beer. They have aged their Danish Wild Ale for two years in a large, very old chestnut Oloroso Sherry Bocoy cask, and mixed this with a smaller quantity of two year old Danish Wild Ale matured in a traditional oak Oloroso cask. The Oloroso barrels enhanced the beer with flavors of roasted walnuts, caramelized fruit and spices.
