100% spontaneous co-fermentation of pears, apples and grains. No brett/bacteria/acid pitch added. 2 months of natural fermentation and acidification thanks to the microflora generated by the fresh fruits of local old varieties, 3 months of barrel aging, 9 months of bottle aging. Bierwort is made from local organic barley malt, wheat from an evolving population and aged hops.
