Inspired by the Belgian framboise, for this beer style they used 80% golden sour beer that has been aged in the tank for 3-4 months, mixed with 20% golden sour beer that has been aged in wine barrels for more than two years. They re-ferment this basic beer with 200 g/l freshly harvested Tayberries that are grown 20 km from the brewery. Tayberries are a cross between raspberries and blackberries, named after the River Tay.
