As the second part of this mini-series 'maturing imperial stouts in rum barrels and finishing with dried fruit' (if you remember Pineapple Popup), they now used sun-dried mango which gave a similar vibe to pineapple: a tropical explosion in a robust, spicy imperial naughty.
